On a Quinoa Craze these Days!

I have been trying so many new Pinterest recipes these days and most of them have been wonderful!  Specifically, I have tried a lot of quinoa recipes for it's health packed punch and great source of protein.  Thought I would share a few favorites:

Pesto Quinoa with Local Tomatoes and Corn

This was downright delicious!  I thought the amount of pesto was a bit overpowering, so watch how much you add to the dish.  The second night I put less and enjoyed it more.

Broccoli-Quinoa Casserole

This was just as good as the standard broccoli rice casserole, but so much healthier!

Last, but not least, I am sitting here enjoying the last of the leftovers for this:
Sweet Corn and Quinoa with Honey Lemon Vinaigrette

I am not a big fan of citrus, but if I was, I think I'd like it.  Increase the green onions a bit for a little extra flavor.

Go buy some quinoa and try out one of these!  They are all quite tasty!

Months Three and Four with our Little Señor

Where does the time go?  I just cannot keep up now that I have two.  Months three and four with David have slowly gotten easier.  By the fourth month, David is pretty much sleeping through the night considering he is going eight or more hours before a feeding.  Since I am not doing a dream feed because he did not tolerate it very well, I am still waking up once in the night in the early early morning.


At David's four month check-up, he was 13 lbs. 10 oz. and 24.5" long.  I cannot recall where he fell in the growth chart, but it was good!  I was terribly unimpressed with David's new pediatrician, which is a struggle and disappointment for me.  I knew my pediatrician in Houston was going to be hard to replace.  Nonetheless, David did much better with his four month than two month shots, thank goodness!

Something I have definitely noticed about our Mister Dave, as I like to call him, is he is much more physical as a boy than Margo was.  He found both his hands and feet early in month three and rolled over both ways in month four, all this being born a month early.  He loves to be held in a standing position and likes to be sitting up much more than laying down, which can be difficult because the pressure on his tummy makes him spit up with the reflux.



Also, in month four, David laughed out loud.  I love his sweet little laugh and his smile just melts me away.  The thing that currently gets him laughing the most is putting his feet to his mouth, funny guy!  He also discovered that he can razz and is fascinated with it, he can make some pretty authentic tootie noises.  It is so cute!

At the end of month four, I started David on rice cereal with a spoon in hopes it would help him sleep and help with the reflux.  I think it has accomplished both and that overall, he is a happier baby for it.  I have got to get busy making fruits and veggies for the upcoming months.

Another thing that is different about David is he is a drooling machine, OMG, it is unstoppable and everywhere.  He cannot stand to go without something in his mouth, yet refuses every possible brand of pacifier on the market, so I finally gave up.  He LOVES Sofie the giraffe, which Margo never took to and pops his little thumb right into his mouth every time I put him down for a nap.  I wonder if he will get a tooth soon.  Margo was a very late teether, so I am unsure if this is just an oral thing or a teething thing.  Considering Margo still uses her pacie in bed, I am a bit relieved that I won't have to fight that battle with David.

Margo and David are really sweet together.  He loves to watch her every move and seems truly fascinated with her.  We had a real breakthrough with them this month when we started bathing them together.  Margo loved helping with his bath, showing him toys and books, etc... and he started really responding to her.  It has definitely started a real sibling relationship between them and I cannot wait to see how it evolves and blossoms.


Our little David has been a challenging baby in some ways, but he is oh soooooo sweet and worth every pain we have been through to get to this wonderful turning point.  To say that we love him immensely is an understatement and we feel so blessed to have our sweet boy in our family!  I can't wait for the upcoming months when he really starts to interact and show his personality!  Lots of fun lies ahead!
